Title: Implement UTF-8 safe JSON POST requests using Invoke-AwJsonPost wrapper function

Key features implemented:
- Added Invoke-AwJsonPost function to handle UTF-8 encoded JSON POST requests with proper content type header
- Replaced direct Invoke-RestMethod calls with Invoke-AwJsonPost wrapper in Ensure-Bucket, Send-Heartbeat, Send-CategoryHeartbeat, and Send-DlpIncidentHeartbeat functions
- Updated .gitignore with comprehensive file exclusion patterns for various development environments and system files

The changes ensure proper UTF-8 character encoding when sending JSON data to the ActivityWatch API while maintaining all existing functionality. The gitignore updates provide better project hygiene by excluding common temporary and environment-specific files.
